Ah I actually get the green beans from a farm near my house. I believe that Trader Joes sells something like them, but I'm not sure of their sugar/carb content.
If you have time to let me know what level you are at with what you can and can't eat, I can send you some recipes if we make something and it matches what you can have :) I know it's so hard, but it truly is crazy how much your cravings will change after a while. I used to be a sugar/carb-aholic and now I crave spinach. Crazy.
In the beginning I just stuck with non-moldy nuts and I did soak them (and I soak rice and lentils too overnight). Now (1.5 yrs later) I don't always soak the nuts, but I still soak the rice and lentils. Hope this helps!
